When the grapes reach the 80% of ripening, they are harvested in crates where the drying process at 16° degrees begins. It lasts for about 2/3 weeks until the grapes lose the 30% of their weight.
The dehumidification system allows to dehydrate the stalk during the first week of the drying process, avoiding any outbreak of diseased or molds that could contrast the proper course of the operation.
After destalking and before the fermentation process, the grapes cold macerate between 0° and 4° C for 4/6 days, depending on the grapes varieties. Then, the alcoholic fermentation at controlled temperature of max. 24° C follows, which lasts for 10/14 days to let to the fruitiest elements to express at their best.
