At the pick up the matured grapes are put in small cases and immediately worked. Stemming, crushing and fermentation at controlled temperature. The maceration on the skins last for a week with délestage, daily pressures and pumping over with controlled dosage of air. Graft of malolactic at the end of fermentation, maturation in French oak for 5 months.
