When the grapes reach the 80% of ripening, they are harvested in crates, where the drying process at 16° C begins. It lasts for about 2/3 weeks until the grapes lose the 30% of their weight.
The dehumidification system allow to dehydrate the stalk during the first week of the drying process, avoiding any outbreak of diseased or molds that could contrast the proper course of the operation.
After crushing the grapes, the fermentation process at controlled temperature between 12° C and 14° C begins. On one hand, it gives to the wine an extreme elegance despite of the organoleptic characteristics of the dried grapes; on the other hand, a great structure.
