Aromatic Traminer grapes, harvested in such a way as to safeguard the integrity of bunches, are softly pressed to obtain very aromatic marc with high sugar content. Fermentation occurs under the best conditions, carefully applying temperature parameters and avoiding air contact. To ensure that typical grape scents are preserved as well as possible, distillation must be prompt and extremely meticulous: therefore, the alembic is manoeuvred quickly and the right amount of heat is applied.
